Yesterday was a cooking day in my kitchen and this amazing recipe emerged…Yogurt Marinated Chicken Skewers.
Have you ever been to a Thai restaurant and ordered Satay Chicken…just to get the peanut sauce? And the chicken arrived pretty dry and lacking flavor? Me too.
Well, this recipe is neither dry or lacking flavor! These Chicken Skewers are delicious all on their own, or even better with my new Thai Peanut Sauce. Seriously, SO good!
Here is what I did:
Yogurt Marinated Chicken Skewers
Ingredients
1 ½ c. Plain Yogurt
2 tablespoons Fresh Ginger, micro-planed
3 tablespoons Dried Minced Onion
2 cloves Garlic, finely minced
1 Lime, zested and juiced
1 tablespoon Fresh Cilantro, minced
1 ½ lbs Boneless Skinless Chicken Breast, cut into 1 inch thick strips
Instructions
- Combine all ingredients in a casserole dish.
- Add in sliced chicken and stir to combine.
- Marinate for 2-3 hours
- Thread the chicken onto skewers…make sure its not too compacted, but just a little chicken on each skewer.
- Cook 5-6 skewers at a time in a medium-hot pan for 1 ½ – 2 minutes on each side. Set a timer to keep on track. It is easy to dry out the skewers.
- Serve with Thai Peanut Sauce.
