Yogurt Marinated Chicken Skewers

Ingredients

1 ½ c. Plain Yogurt

2 tablespoons Fresh Ginger, micro-planed

3 tablespoons Dried Minced Onion

2 cloves Garlic, finely minced

1 Lime, zested and juiced

1 tablespoon Fresh Cilantro, minced

1 ½ lbs Boneless Skinless Chicken Breast, cut into 1 inch thick strips

Instructions

  • Combine all ingredients in a casserole dish.
  • Add in sliced chicken and stir to combine.
  • Marinate for 2-3 hours
  • Thread the chicken onto skewers…make sure its not too compacted, but just a little chicken on each skewer.
  • Cook 5-6 skewers at a time in a medium-hot pan for 1 ½ – 2 minutes on each side. Set a timer to keep on track. It is easy to dry out the skewers.
  • Serve with Thai Peanut Sauce.
