Ok, I must confess that I made this for my daughter for BREAKFAST…while it does look decadent, it really does have many redeeming nutritional qualities going for it. I used non-fat plain yogurt, mixed with pumpkin butter from Trader Joes for the creamy component…and the cookies have oats, whole wheat flour and pumpkin in them. This yummy parfait seems to qualify for breakfast much more than donuts in my opinion. 🙂
Ingredients:
1/2 cup plain yogurt
2 tablespoons Trader Joe’s Pumpkin Butter
1 Chocolate, Chocolate Pumpkin Cookie
2 Drizzles of Nutella
2 Sprinkles of Cinnamon Sugar
4 tablespoons of freshly whipped cream (though we were fresh out!)
Instructions:
First, measure out your yogurt and mix in the Trader Joe’s Pumpkin Butter (You could also use seasoned Pumpkin in this step).
Next, begin layering in a clear glass…
That layer shows yogurt with cookie crumbles (I used my Chocolate, Chocolate Pumpkin Cookies). Next came the Nutella drizzle. Then you repeat, topping each pumpkin yogurt layer with a sprinkle of cinnamon sugar. I would have also included a whipped cream layer, but we were all out. I also topped my daughter’s with a sprig of mint for fun.
This is a special treat for breakfast. My daughter really enjoyed it. Blessings!
