Chocolate, Chocolate Pumpkin Cookies

Yes, this is another pumpkin recipe…I couldn’t help it :). So, what could be better than pumpkin chip cookies? How about pumpkin chip cookies with chocolate? That is what I thought…so, here they are. This time I also added oatmeal for a different consistency as well. Enjoy!

Ingredients:

1 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
1 egg
2 teaspoon vanilla extract
1/2 cup Cocoa Powder
1 1/2 cups whole wheat flour
1 1/2 cups quick-cooking oats
1 teaspoon baking soda
1 1/2 teaspoon ground cinnamon
1 15 ounce can canned pumpkin
1-1/2 cups semisweet chocolate chips

Instructions:

First, cream your butter and sugar together

Then, add in your eggs and vanilla and mix until the mixture is light and smooth

Now, add in your cocoa powder and mix until combined

Then, add your dry ingredients in on top of your wet. Mix them lightly with a fork to disperse the baking soda and salt before turning your mixer on.

Here is an action shot to keep it exciting. And, as you might notice…I put the pumpkin in there because I forgot earlier with the wet ingredients 🙂

Now, add in your chocolate chips.

Here is the finished dough…it was SO good it almost didn’t get baked!

Bake at 350 for 14 minutes and then let sit on hot pan for another minute or so before setting aside to cool. This photo is of my test cookie. I baked it to be sure the consistency was right.

Here is the finished product! These cookies were enjoyed by all. And, with the whole wheat flour, oats, and pumpkin, there were some great nutritional components as well.
