Seriously…mastering the perfect roast chicken breast is a game changer. Once you do, you are under an hour away from so many meal options. Flavorful, juicy chicken is perfect for salads, sandwiches, burritos, pot pies, or even served just like it is alongside a pile of creamy mashed sweet potatoes and a fresh salad.
And, trust me here…it is so worth it to cook it on the bone. It has so much more flavor, and it so much easier to keep juicy and often, it’s less expensive too!
Perfect Roast Chicken Breast
Ingredients
4 Bone-in Chicken Breasts
1 teaspoon Salt
½ teaspoon Pepper
2 tablespoons Ghee, melted
Juice of ½ Lemon (optional)
Instructions
- Preheat oven to 425 degrees.
- Line baking sheet with parchment paper
- Place chicken on the baking sheet.
- Squeeze Lemon juice over chicken.
- Brush chicken with melted ghee.
- Sprinkle with salt and pepper.
- Bake at 425 degrees for 35 – 45 minutes (depending on the size of your chicken breasts), or until chicken reaches 165 degrees and juices run clear.
- Let chicken rest for 10 minutes.
- Remove chicken from bone and slice and serve or store to use throughout the week.
- Reserve the bones in the freezer to add to your next batch of homemade bone broth.
