This is it! The BEST mayo recipe around. My husband agreed that it is BETTER than Best Foods! And, believe me, my husband is a huge mayo fan. Since we have stopped eating soy and vegetable oils, it was time to make my own.
I made a few attempts and they were good. They worked every time, and my family enjoyed them. But, then I tried a little change and finally – NAILED it!
Better than Best Foods!
You make it in one jar. The only thing to clean, besides a few measuring tools, is the immersion blender. And, SO flavorful.
It has been perfect for my husband’s annual turkey sandwiches and will be perfect for every mayo need all year long!
Here is what I did!
Diane’s Best – Better than Best Foods Mayo

Ingredients
1 Whole Egg
2 Egg Yolks
1½ cups Avocado or Light Olive Oil
½ teaspoon Salt
¼ teaspoon Pepper (optional)
½ teaspoon Dried Mustard
1 tablespoon White or Red wine Vinegar
Juice of ½ Lemon
Instructions
Place Eggs, Avocado Oil, Salt, Pepper, Dried Mustard and Vinegar into a quart mason jar.
Place your immersion blender in jar to the bottom and turn on. As the mayo thickens, move your immersion blender slowly to the top until fully combined and thickened.
Add in the lemon juice and blend until combined.
Put the lid on the jar and refrigerate.
You will never go back to store bought! I don’t like to focus on the negative, but this mayo has NO sugar, NO soy, and NO ingredients that aren’t needed!
And, for those of you trying to be Whole30 compliant, this mayo qualifies!
So, grab your mason jar and your immersion blender and get that mayo going! Will be ready in no time!
