Lemony Chicken Soup (Part 2)

Here it is…waiting for me. Let’s get this soup on the burner! I brought the soup to a low boil (which took a little longer than I had anticipated) and added the noodles. Once the soup came to a boil, after 15 minutes, it was all ready for us! I served a crusty piece of bread alongside the soup for dipping. The sweet potato added a great color to the broth and the soup was delicious. It is always rewarding for me to put a hot pot of soup on the table. I enjoy that I was able to use a chicken two ways and get more for our money. I also enjoy the nutritious meal that is created with really, very little effort.

You can taste the celery leaves in the background of this soup as well as the lemon and the little kick from the pinch of red pepper flakes. Thankfully, there is more in the pot to serve for lunch. 🙂

    The words “lemon” and “soup” in the same sentence remind me of this recipe my younger sister tried once. It should have been called “sour lemonade soup” because it was WAY too strong lemon! haha
