Cheesy Broccoli Soup (More Cheesy)

There are two types of broccoli soup…one has more broccoli and less cheese. I call that one, Broccoli Cheese Soup. The other type has more cheese flavor and less broccoli flavor. I call this one Cheesy Broccoli Soup. Today, I had broccoli left from last week’s delivery. And, I was wondering what we would eat for lunch. I didn’t think my daughter would be thrilled with plain steamed broccoli so I decided on Cheesy Broccoli Soup.

First, put 1/2 of a red onion, chopped in a deep pot to saute. After a few minutes, add the cut broccoli.

Then, add 5 cups of water and simmer (about 20 minutes) until the broccoli is tender.

In the meantime, shred two cups of cheddar cheese and 1 cup of jack cheese and measure 1 1/2 cups of whole milk.

Next, place broccoli mixture into a blender.

Leave the lid off for a few moments to let the steam escape before blending. Then, pulse until soup is smooth.

While the soup is in the blender, add 2 tablespoons of butter and 2 tablespoons of flour into the bottom of the pot.

Cook until the butter melts and mixes with the flour into a roux. This will thicken the soup.

Add the soup from the blender back into the pot.

Add in the whole milk and 1/2 cup of half-n-half and bring the soup to a simmer.

Add in your cheeses and stir while they melt. Oh, no…I am missing the “pretty picture”. Β Trust me…it was yummy! πŸ™‚ Β Enjoy!

    • Hi Karen, Of course I remember. In fact, I am the Diane who bought the soap to support your daughter’s trip. πŸ™‚ I have really enjoyed the soap too! I think we became friends on Facebook some time ago when we worked together at the conference. That time is always such a treasure! Thank you for your encouragement Karen.
