Tuesday’s Treat – Idaho Potatoes

We had such a nice day at home today! We worked on Hannah’s school and took care of regular household duties. I enjoy the peacefulness of Tuesdays.  I must admit that the only things on this plate from the farm box are the strawberries and the black grapes which are just washed and put on the plate.  I couldn’t resist making this today.

I made Hannah one of her favorite things for breakfast today…potatoes.  Today they came in the form of my Grandma’s Idaho Potatoes. They are yummy shredded potato patties that are lightly fried. I enjoy them because they remind me of all the years that my grandma and mom made them for me. Then, when I got older, I began making them at family gatherings. Oh, the memories!  I would shred potatoes until my hand hurt!  But today, with just me and Hannah eating, we needed a much smaller amount.

Ingredients for 4 patties:

2 large potatoes shredded
1 beaten egg
Salt and Pepper

Shred your potatoes – today I used red potatoes, but any type will do.  With Russets, you will want to squeeze out some of the starch before adding the beaten egg.

Mix everything together and put on a hot griddle or in a hot pan with a drizzle of oil

Cook on first side until it is browned, then flip over to cook other side. It takes 3 -4 minutes on each side.  If you are patient, they will become crispy on the outside and soft on the inside and oh so yummy!  I am not always as patient as I should be :).  That must be how I know that encouragement might be needed here. 🙂

Enjoy with some farm fresh fruit and, of course, ketchup.
