“Thyme-ly” Twice Baked Potatoes with Dijon and Garlic

"Thyme-ly" Twice Baked Potatoes with Garlic and Dijon Our son is home for Spring Break this week. It is such a blessing to have him here! It is nice to have 5 at the table again and share in day-to-day life. I know it is only for a short time, so I savor it while it lasts. Since we were all sitting down together tonight, I decided to make something I haven’t made in quite some time and these potatoes fit the bill. We served these with roast chicken and green salad…and for dessert…Chewy Rocky Road Brownies! Dinner was enjoyed, but naturally…the brownies upstaged everything. 🙂

Here is what you do:

Bake 6 Medium Potatoes at 375 degrees for 1 hour or until soft. Meanwhile, add to small sauce pot:

1 1/2 cups Half and Half
4 Sprigs of Thyme
4 Cloves of Garlic
2 teaspoons Dijon Mustard
2 tablespoons Butter

Bring to a slow simmer and “steep” on low for 20 minutes.

Also, mince 1 large shallot and saute in 2 tablespoons of Butter for 20 minutes on low. Set aside.

Remove potatoes from the oven. Slice in half and scoop out the potato, leaving a bit of a rim of potato inside to help it to stand on its own.

Use a potato masher to mash the potatoes and then add in the milk mixture, the shallots, 1/2 cup of sour cream and 1 cup of shredded cheddar or jack cheese.

Spoon mixture back into the potato halves and sprinkle with additional cheese.

Place in a 350 degree oven for 20 minutes. Top with finely sliced scallions and serve.

These were delicious, but next time I make these, I will also be adding some pancetta into the potato mixture…that would add a salty touch that would be tasty as well. Enjoy!
