Stuffed Bell Peppers have always been one of my favorite dinners. I am not sure if it is because my mom made them when I was a child or if it is because they are all packaged in their own little pepper packages. Whatever the reason, even today, I find this to be such a comfort food for me.

Each week I try to head out to the farmer’s market in our area. There are several long rows of amazing fresh produce and meats and local baked goods. This week, at my favorite heirloom stand, I found the peppers I used in this recipe along with the yummy eggplant. As soon as I saw them, I knew they were destined to become this favorite comfort food. As a child I only remember green peppers, which are great too. Our recipe also always included rice…which is great, but this time I left it out.
This recipe takes a little different direction than my childhood favorite. Today I added eggplant and ricotta cheese and used multicolored peppers. I also served it alongside perfectly cooked spaghetti flavored with butter, garlic, and fresh parsley…yummy!
