My husband grilled tri-tip and we had leftovers…instead of tri-tip salad, a request for sandwiches was made…I am so glad the request was made because we enjoyed these. 🙂 Even our little son ate tri-tip. 🙂 Here is what you do:
Begin by melting 2 teaspoons of Coconut Oil.
Add in 2 ounces of pancetta.
And, onions…let them cook on low until they begin to caramelize (turn light brown and sweet)
Add in the beef and warm through.
In the meantime…make your sauce. Here is how I made mine…I mixed about 1/2 cup of ketchup with 1/3 cup of mayo and 8 dashes of Worchestershire sauce, 10 dashes of soy sauce, and a teaspoon of sriracha. I am glad I didn’t have any A1 in the house…I like this better. 🙂
Spread the sauce on your rolls. I have to admit that when my husband saw the sauce, he was wishing for simple ketchup. But, when he tasted it, he was happy. 🙂
Top the sauce with the warm tri-tip and onions.
And, then, top with mixed greens that have been seasoned with salt and pepper. Now, this is a great way to have leftovers :).
Blessings!
