Creativity at its best…I really enjoyed this side dish. The radicchio is a bit bitter, the bacon is smokey, and the pear sweet. While radicchio has never made an appearance on our dinner table, it is now welcome side dish!
Ingredients:
4 cups packed Radicchio, chopped (already washed and chopped from Produce Prep Tuesday!)
1 cup Yellow Onion, chopped
5 strips of Bacon, chopped
1 tablespoon, Real Maple Syrup (you could also use honey)
1 tablespoon, Apple Cider Vinegar
1 tablespoon, Butter
1 tablespoon, Olive Oil
2 Bosc Pears, peeled and cut into medium chunks
2 pinches Red Pepper Flakes
Instructions:
First, cook your chopped bacon in a deep skillet or in your favorite, always used, dutch oven. 🙂
Cook until your bacon is on its way to being crisp. Then, add your onions and cook until softened. Next, add your radicchio and cook until wilted.
Add in 1 tablespoon of apple cider vinegar and 1 tablespoon of real maple syrup and your cut up pears and allow this mixture to cook along with the radicchio mixture for 2-3 minutes. Remove your radicchio mixture and reveal this beautiful sauce that has formed at the bottom of your pan.
Add in your red pepper flakes and butter. Allow the butter to melt while whisking your sauce. Top your radicchio mixture with this delicious sauce and serve. You still taste the bitterness of the radicchio, but it is now balanced with different textures and flavors that make it delicious!
