This Roasted Beet Salad with Oranges and Mint was enjoyed by both those of us in our homes who like beets, and those of us in our home who are a little less excited about them…the orange and mint really balanced the flavors well…I was pleased! This past Saturday I received two beautiful bags of produce from the Los Angeles Farmer’s Market. They were delivered by a company called Fresh Nation and they were amazing!
In one of the bags I found some fresh beets AND because I just happened to have my spiral cutter for veggies arrive that day as well, those beets got loaded right on and spiraled! They were the prettiest thing I spiral cut that day! What an amazing color! And, the spiral cutting helped them to roast in only 20 minutes…that was a HUGE win!
We also had some orange on hand and some mint in the garden and with that this great salad was born. It is earthy from the beets, rich from the olive oil, sweet from the orange segments and juice and balanced by the bits of mint.
If you enjoy beets, like I do, I know you will find this salad delicious!
