Pumpkin and pecans…what could be better…one of the things I look forward to during the fall season is PUMPKIN!!! Sometimes I wonder why we seem to restrict these recipes to fall, and yet, I think I know why…I kind of go overboard during the season. 🙂 Is that possible??
So, here is the latest. I had initially planned to use my easy pie crust recipe for the base of the squares, but then decided to go an alternate route with nuts and oats and cookie butter. It was a great route to go! My 2 year old especially enjoyed them and ate more than his fair share. 🙂
Here is what I did:
Ingredients:
Filling
15 ounces Pumpkin
1 T Pumpkin Pie Spice
3 Eggs
1/2 cup Sour Cream
3/4 cup Brown Sugar
Combine all ingredients into a large bowl and whisk until well combined. Set aside and top the crust with the filling once it is complete.
Crust
1 cup Rolled Oats
1 1/2 cups Pecans
1/2 cup Brown Sugar
4 T Butter
1/2 cup Cookie Butter
Combine all of these ingredients and pulse until well combined. Press into the bottom of a 9X13 baking dish. Top with the filling and bake at 350 degrees for 55 minutes or until the pumpkin filling is well set and a knife comes out clean when inserted into the pie.
This could be served with fresh whipped cream…it would be delicious! Since my little one ate over half of this recipe over several days…we didn’t get to making whipped cream! 🙂

I am completely with you, I don’t understand why we don’t use pumpkin all year round, it’s not like anyone is using fresh pumpkin anyway? Maybe I’ll try making these in April just to mix things up and break the fall pumpkin tradition.
