Those cans of pumpkin are calling my name each day. This time they said…put me in pumpkin pancakes…ok, maybe they didn’t, but when I say the Pioneer Woman’s Pancake Post on her blog, I had to try them out. That is more accurate! 🙂
Ingredients (my adaptations are in parenthesis)
3 cups Cake Flour (I used all purpose flour and it worked well but needed more milk)
1 teaspoon Salt
2 Tablespoons Baking Powder
3 Tablespoons Sugar (I added 5 Tablespoons because I didn’t have the fancy toppings on hand)
2 cups Canned Pumpkin Puree
2 whole Eggs
3 teaspoons Vanilla
2-1/2 cups Milk (I used 2 3/4 cups)
1/4 teaspoon Pumpkin Pie Spice (I added 1 teaspoon)
Instructions:
First, we mixed our wet and dry ingredients together in separate bowls.
Then, we poured the wet into the dry and mixed:

It was a little thick, so we added a bit more milk and it was right on track.
We “griddled” them on our griddle:
And, they were delicious. I kind of want some for dinner right now. 🙂
Here is the plate of pancakes that was packed up to go to work with my husband. 🙂
And, here are the ones my daughter and I enjoyed…along with a bit of batter we saved for the next morning.
