Do you remember, a few weeks ago, I made the best ever Popcorn Chicken? Well, I made it on a night when my husband and I were going out on a date…so, we only had very little…just a taste :). I knew I needed to make it again so I did. But, this time I decided to make a salad and have the chicken be the star of the show. And, let me tell you, that was a GOOD decision. 🙂
To a large bowl I added…red romaine lettuce, cucumbers, green onions, cilantro, tomatoes, radishes, red peppers and homemade ranch dressing. Then, to top it all off, since I already had the hot oil, I made tortilla strips with corn tortillas…and, of course, we can’t forget the popcorn chicken! This salad was a delicious hit for a Saturday night! Actually, I highly recommend it any night of the week! 🙂 Blessings!
