Generally on Sunday mornings we are caught in a happy hustle out of our home to get to church. We are running to and fro to be prepared and to leave on time. There is generally loud Christ-centered music blaring from the speakers and singing going on as well. 🙂
This Sunday was a bit different…our daughter awoke to a super sore shoulder and our littlest had the kind of cold that people run from…especially when he sneezed. 🙂 So, we opted to stay home. So, I cooked up a special breakfast and we listened to one of our favorite pastors (John MacArthur) on Grace to You (gty.org). It shaped up to be a very nice morning. 🙂 Here is what I made:
Begin by melting 1 tablespoon of coconut oil into a large skillet.
Add in 3 ounces of pancetta and cook for 8 minutes or so.
Add in your 6 eggs that have been well beaten and 1 teaspoon of fresh thyme leaves.
Add in 1/3 of a cup of marscarpone cheese and stir.
Cook until well set and then add in two finely sliced scallions.
Remove from the pan and place in serving bowl. Top with chopped fresh tomatoes.
We served ours with warm toast made from fresh bread I had bought at the farmer’s market, and fresh sliced strawberries. Great Sunday morning breakfast!
