Cauliflower is a controversial veggie in our home. I grew up eating and enjoying it. Others in my home did not. 🙂 This is by far the best way to prepare it for both parties to enjoy it. The first time I made it I was surprised that it took on such a great texture, but it does. Try it out…you will be surprised too. 🙂
Here is how you make it:
Begin by taking your washed and prepared cauliflower out of the fridge…or, if yours (or mine at times) isn’t washed and prepared…wash and prepare your cauliflower. 🙂
Place your cauliflower into a large dutch oven and drizzle with olive oil and salt and pepper.
Roast uncovered in a 425 degree oven for 30 -45 minutes or until the cauliflower is very tender. You could also place your cauliflower on a baking sheet, but I was going for a “one pot” side dish.
When tender, bring back to the stove top and add in your goodies. I added 1/2 cup of cream cheese, 1 tablespoon of butter, and 1/3 cup of milk.
At this point I simmered the cauliflower in the milk etc for a few minutes. Then, I brought out the immersion blender. You could also use a food processor or a hand mixer. Whatever tool you choose, mash away…
Place in a serving bowl and top with thinly sliced scallions.
This “pcauliflower” has the texture of mashed potatoes and much of the flavor of mashed potatoes. It does have somewhat of a cauliflower flavor…but even my husband, who doesn’t enjoy cauliflower, enjoyed this side dish. I hope you enjoy it too!
