Yesterday, I was pondering what to make with 2 1/2 pounds of beef that were thawed in the refrigerator…meatloaf won out. This version is moist and very flavorful and will make GREAT sandwiches on the second day.
Ingredients:
1 cup Bread Crumbs
2 1/2 lbs Ground Beef
1 teaspoon Rosemary, Ground
1 teaspoon Sweet Paprika
1/2 teaspoon Pepper
2 teaspoons Salt
2 Eggs
1 Onion, Grated
1 tablespoon Dried Basil
1/2 cup Half and Half
8 ounces Tomato Sauce
Olive Oil Drizzle
Ketchup
Instructions:
Combine all ingredients, except for the Olive Oil mixing without packing the ground beef. Form into 2 loaves. I chose to make 1 large loaf and 1 small loaf for the freezer. Drizzle with Olive Oil and bake for 1 hour and 15 minutes at 375 degrees.
I served mine with carrot mashed potatoes and salad.
