Our little one turned one last week, so on Sunday we had all of our family over for his birthday party. It was such a blessing. We served “children’s food” to everyone. We had mini burgers, mini hot dogs and mini corn dogs along with a whole array of other yummy treats, made small…including mini-root beer floats! Yum! There will be more words to come regarding this wonderful celebration, but for now, I wanted to pass along the best mini corn dog recipe I have tasted…well, that might be an exaggeration…it is the only one I have tasted. But, it was GREAT! It was nice to know I had used good quality hot dogs and that the batter was all natural/organic as well. Here is what our corn dogs looked like:
I came across the recipe on Pinterest and couldn’t wait to try it! You can check it out here. I did change a few things…
1. I didn’t use skewers. I found sticks at Smart and Final. They were a bit more manageable for all ages.
2. I didn’t add the cayenne or the grated onion.
3. I did add sweet paprika and ranch mix from Penzey’s
4. I added 1/4 cup agave, for a bit more sweetness.
This, along with all of our other “mini food” was a hit with both children and adults! Blessings!
