I created this Mexican Meatball recipe not only because it’s delicious, but also to help us all to have a successful Whole30. Delicious food that is grain free, dairy free, and flavor-ful can’t be beat!
Here is what I did:
Mexican Meatballs
Ingredients
2 lbs. Ground Beef
½ cup Cilantro, chopped
½ large onion, grated or minced
2 Carrots, grated
2 Eggs, beaten
2 teaspoons, Cumin Seeds
2 teaspoons, Oregano
1-teaspoon Garlic Powder
2 teaspoons Pink Salt
2 teaspoons Chili Powder
Instructions
Combine spices into a small bowl and set aside.
Place ground beef, cilantro, onion, eggs and carrots into a large bowl.
Sprinkle spices evenly into the bowl with the beef and veggies.
Using your fingers/hands, lightly combine all ingredients.
Shape 1½ tablespoons or so of beef mixture into each meatball and place on a baking sheet lined with parchment paper. Makes 30-36 meatballs.
Bake at 400 degrees for 20 minutes.
Serve over cauliflower rice, a baked sweet potato, or a bed of spinach…or just enjoy all by themselves.
These meatballs also freeze well…so make a double batch and your future self will thank you next time you don’t know what to serve for dinner!
