My husband really enjoys mashed sweet potatoes. We received some in our farm box so it was time to get mashing! 🙂
First, peel and cut your potatoes in half lengthwise. The fewer cuts you make, the less watery your mash will be. Just be sure they are consistent in thickness so they cook evenly. You will notice that I left the smaller potatoes whole. Cover in water and simmer for 20-30 minutes or until soft.
Drain the water from your potatoes and put them back in the warm cooking pan. Mash with a potato masher until your potatoes are the consistency you like them and then, directly on the warm pan to the side of the potatoes, add in 1/4 cup of half and half and 2 tablespoons of butter. The warm pan will begin to warm your liquid and butter before you mix them in. Combine. If you like sweeter sweet potatoes, you could also add in a couple of tablespoons of brown sugar and some cinnamon and omit the pepper.
We served ours alongside Garlic Thyme Mashed Potatoes.
