Apple Crisp…who can resist? Well no need to resist with my recipe for Lower Sugar Apple Crisp for Two! Do you remember going to bed as a child and feeling like you were missing out on something? You wondered if your parents were having all sorts of fun while you were in bed? Well, the night I made the Apple Crisp for my husband and I those childish suspicions were confirmed! 🙂 The best part, besides it smelling and tasting delicious, is that it was pretty low on added sugar and as far as desserts go, it was filled with healthy ingredients. Here is what I did:
First I peeled and thinly sliced three apples and placed them in two individual serving ramekins. I topped those with a mixture of 1 teaspoon of cinnamon, 2 teaspoons sugar and 1 tablespoon of flour. I split the mixture between the two ramekins filled with the apples and mixed them with my fingers. You could also leave the apples in a bowl and mix the cinnamon sugar mixture in before placing it in the ramekins. I added the flour to thicken the juices, but it could be left out. You really want to load up on the apples because they do shrink as the cook and release their juices.
Next, in a medium sauce pan melt 2 tablespoons of butter with 1/2 cup oatmeal, 1/2 cup of sliced almonds, 1 teaspoon of cinnamon, 1 teaspoon of sugar and a pinch of salt.
Once the butter melts, combine the mixture and place it on top of the apples and bake at 350 degrees for 35-45 minutes, or until the apples are tender and the topping is crispy.
We topped our dessert with a bit of whipped cream, but it would also be delicious with Ice Cream. 🙂 If you aren’t concerned with your sugar intake, you could add a bit more at each stage, but we found it to be delicious just like it is. This crisp would also be delicious with walnuts or pecans instead of the almonds.
So, next time you want a little something sweet after your children go to bed…try this delicious apple crisp! It won’t disappoint! Or, you could be really nice and make some for your children too! 🙂
