Loaded Baked Potato Nachos…doesn’t that sound good? I dreamed this “assembled” recipe up when we were eating Lays Wavy Potato Chips the other day. They are so nice and thick and crispy that I began thinking that they would make delicious nachos. And, once that thought came, I went even further and thought…how about using the toppings that are perfect for a loaded baked potato…Yum!!!
Since we are currently still living in a hotel (which is why these photos are so dark) while waiting for our home to close escrow, this recipe had to be simple with only two burners and a microwave available to me for cooking. So…this became more of an “assembly” of good ingredients than a recipe. I really didn’t “cook” anything in the traditional sense. I steamed broccoli in the bag it came in in the microwave…I used jarred cheese sauce, pre-cooked bacon…really any shortcut I could find…and let me tell you…this is a GREAT snack or even a meal if I added some protein. I picture it being served as a “nacho bar” of a different type…even alongside baked potatoes if you so desire. Perfect for a World Series or Super Bowl Party. The chips stay crispy for 20 minutes or so before they soften…just like traditional nachos.
