Is that Last Night’s Dinner?

Last night was a night of re-purposing leftovers. We had about 2 portions of stew remaining, and it was a little light on the veggies after dinner last night. So, Tuesday’s stew became Wednesday’s beef and noodles with a side of Garlic Parmesan Broccoli and Roasted Beets. Score…It tasted pretty different and it didn’t feel like leftovers, not that leftovers are bad in any way. I was just trying to be creative tonight. 🙂

Garlic Parmesan Broccoli:

First, go to the refrigerator and grab that mason jar of pre-prepped broccoli (:))

Next, heat your dutch oven or skillet, and drizzle 2 teaspoons of Olive Oil in the bottom. To the Olive Oil, add 2 tablespoons of butter. Add your broccoli to the pan.

Now, press 4 cloves of garlic on top of the broccoli and saute for until you get a little color on your broccoli. Then, add 1/2 cup of water and some salt and pepper.

Cook until the broccoli is tender, but not mushy. This takes about 7 minutes. Remove from pan and top with shredded parmesan cheese. I covered ours with foil while the rest of dinner finished up and the cheese was nice and melty on top of the broccoli. This is a sure way to help those who don’t enjoy broccoli to eat it and possibly enjoy it. 🙂

Beef and Noodles:

Take your remaining “Fall is Here” Beef Stew, and add 1/4 cup of half-n-half and 1 tablespoon of balsamic vinegar. Serve over creamy lemon pepper noodles.

I used Orecchiette Noodles. They are playfully called “little ears” because of their shape. I chose them because they hold sauce well and would be able to stand up to the beef.

Cook your Orecchiette for the recommended time and drain most of the pasta water. Add the Orecchiette back into their hot pan with 1/4 cup of the water. Add 2 tablespoons of butter and 2 tablespoons of half-n-half and lemon pepper to taste. These noodles were good on their own. My daughter asked me to add cheese sometime and make “fancy mac and cheese” with them. 🙂

The final addition to dinner was roasted beets, prepared on Produce Prep Tuesday. Here is the final plate.

Besides the parmesan looking a bit stringy, it was a yummy dinner, that was very different from last night’s stew. Challenge met! I am grateful! Blessings to you!
