My family likes chewy brownies. Tonight…I finally made a brownie that remained chewy, but has toppings to keep it interesting. This recipe is a keeper! While they were cooking, the marshmallows smelled like they are roasting over a fire. When they come out of the oven, the walnuts were all toasty, the chocolate melted, and the marshmallows are lightly browned. We couldn’t wait to dig in! So, after dinner, the dishes were washed and the dessert cut up and the movie started. The time came! π Thankfully, with all this chocolate, there was cold milk in the refrigerator too! π
Ingredients:
ΒΎ c. Baking Cocoa
1 Β½ cup Flour
1 teaspoon Salt
Β½ cup Butter
ΒΌ cup Peanut Butter or Coconut Oil
3 Eggs
2 cups Sugar
1 Β½ teaspoons Vanilla
10 Marshmallows β quartered
1 cup Chocolate Chips
Β½ cup chopped Walnuts
Instructions:
Preheat oven to 350.
Whisk the cocoa, salt and flour together and set aside.
Melt the butter and peanut butter (or coconut oil) over low heat and set aside to cool.
Mix your eggs, sugar and vanilla on medium speed, until well combined. Add in the cooled butter and coconut oil mixture and continue to mix until combined. Add in your flour/cocoa mixture in batches until all combined. Spread mixture into a lightly greased 9X13 pan.
Top with the chocolate chips, then the marshmallows and then the walnuts.
Bake at 350 degrees for 25 β 30 minutes, or until a toothpick comes out mostly clean when inserted in the middle.
Let the brownies cool for 20 minutes or so and then cut and enjoy! π

Oh, Diane, Diane, Diane… I should know better than to read your blog when I’m hungry. But then again, I’m *always* hungry for a good chewy brownie! And marshmallows? I’ve been known to eat half a bag of the mini’s in one sitting. I’ll have to save this recipe for next time I’m in a baking mood!
