Instant Pot Pumpkin Chili…Pumpkin is so on-trend…we are even putting it in chili these days…and let me tell you, I’m so glad we are! It adds sweet and rich back notes to this recipe and the pumpkin pie spice adds that little something you like, but can’t quite put your finger on. This chili also is bean free for those of you who don’t enjoy beans. If you do enjoy beans, I would choose cannellini beans.
And, its all made in the Instant Pot…how easy is that!
Here is what I did:
Instant Pot Pumpkin Chili
Ingredients
2 ½ pounds Ground Beef
½ large Red Onion, diced
2 – 28 ounce cans Crushed or Diced Tomatoes
3 tablespoons Chili Powder
1 tablespoon Salt
2 teaspoons Pepper
1 Green Pepper, diced
2 cups Fresh Spinach, chopped
1 – 15 ounce can Pumpkin
2 tablespoons Adobo Sauce from Chili’s with Adobo Sauce with 1 Chili, diced
2 cloves Garlic, minced
2 teaspoons Pumpkin Pie Spice
2 teaspoons Cumin
Optional Garnishes:
Red Onion, Cilantro, Avocado, Jalapeño
Instructions
- Turn your Instant Pot to sauté and sauté beef and spices until browned.
- Add peppers, onions and garlic and sauté for 5 minutes.
- Add tomatoes, spinach, chili and adobo sauce and stir to combine.
- Cook on high pressure for 25 minutes.
- Manually release steam and serve topped with garnishes of your choice
- The flavors are even better the second day, so be sure to make plenty!
