HPK (Haller Pizza Kitchen) BBQ Chicken Pizza This past Wednesday we hosted a Seder dinner at our home. To make things easier I purchased 7 large rotisserie chickens and served those along with some of the other “pot blessing” items people brought to share. I then used the remaining bones to make matzo ball soup too…yum! But…I am going on a tangent here…we have some chicken left. Some equals about 1 1/2 chickens. So, it is leftover time! One night I just served the chicken and potatoes that we had eaten on Wednesday. This time, I decided to make a BBQ Chicken Pizza.

Here is what I did:

First, assemble your ingredients.

1/2 Red Onion, sliced thin
1 cup Cilantro, roughly chopped
1 1/2 cups chicken, roughly cubed
3/4 cup of BBQ Sauce
1 lb shredded mozzarella cheese, shredded
2 Pizza Crusts (You can make your own, but since my Trader Joe’s sells fresh dough for 1.00…I took the easy way!)

Lightly grease your cookie sheet or pizza pan. Pre-heat your oven to 450 degrees. Roll and shape your pizza dough to the desired thickness and shape. I like to roll ours pretty thin and place it on a cookie sheet.

Paint your BBQ Sauce onto 2 pizzas. I like ours in a thin layer. Otherwise, it tastes too strong in my opinion.

Sprinkle the red onion on the pizzas and then add on your cheese. I also put just a thin layer of cheese. I don’t like the cheese to overwhelm the chicken, onion and cilantro. And, my son prefers it if the cheese isn’t too thick. 🙂

Top with the chicken and then bake at 450 for 11 minutes, or until bubbly. Then, quickly top with fresh cilantro and serve.

This recipe uses up a couple of cups of chicken and is delicious. We all enjoy it and it makes for a nice casual dinner on a busy Saturday night. It also heats up nice as leftovers. 🙂

    This looks so good! We had pizza yesterday. Albeit, Little Caesars, but pizza none the less. I have yet to make homemade pizza, even though my little one keeps asking to do this.
