Peanut sauce is one of my husband’s favorite things to eat. Really. Tonight, I decided to try to copy our favorite Thai restaurant’s version and my husband said that it hit the mark. He even went as far as to say that it was better…WOW! 🙂 So, here I am quickly typing before I forget what I did! 🙂 In the past, I have had a habit of failing to write down the recipes I create and then, I can’t duplicate them…this blog has cured me of this, mostly. 🙂 But, this time…instead of forgetting to write everything down…I forgot to photograph the stages…sorry!
Here are the ingredients:
1 cup smooth peanut butter (I used Trader Joe’s All Natural)
1/4 cup low-sodium soy sauce
2 teaspoons of Sriracha
2 tablespoons brown sugar
1 lemon, juiced
1/2 cup hot water (you may need to adjust this depending on the thickness of your peanut butter.)
And…the instructions:
Mix the peanut butter, soy sauce, Sriracha, brown sugar and lemon juice together in a medium bowl. Add in the hot water 1/4 cup at a time until the sauce is a pour-able consistency and can be whisked together completely. Let the peanut sauce sit in the refrigerator for a couple of hours for the flavors to develop. No more jarred sauce for us!
I served the Peanut Sauce with Chicken Satay and a green salad. I am happy to report that I had a happy family. 🙂
