Healthy Beef and Veggie Soup – Healthy soup that warms you from the inside out!
Ingredients
1 ½ pounds Beef Stew Meat
1 teaspoon Salt
½ teaspoon Pepper
2 tablespoons Arrowroot
2 tablespoons Avocado Oil
14 ½ ounce can Diced Tomatoes
2 tablespoons Tomato Paste
9 cups beef broth
2 large Red Potatoes, diced
2 large Zucchini, diced
1 small Onion, diced
2 Carrots, sliced
1 ½ cups Cabbage
1 can full fat Coconut Milk
Instructions
- Combine arrowroot, salt and pepper.
- Toss stew meat in the arrowroot mixture.
- Brown stew meat in batches about 2 minutes on each side.
- Set aside.
- Place beef broth and tomato paste in the Dutch oven and simmer for 5 minutes.
- Add in all ingredients, except coconut milk and simmer for 60 minutes on low.
- Finish with the can of coconut milk.
- Season with salt and pepper to taste and serve.
This soup is also perfect for your meal prep for the week…reheats well and lasts for up to a week in the fridge. Hot lunch!
