It is Saturday around 12:00…time for lunch. It is also time for grocery shopping and the fridge is looking sparse…what to make? There is sausage. There are eggs…and brie cheese. And, we have a loaf of Rosemary Bread from Costco…a sandwich is starting to come together! And, since my daughter’s favorite breakfast sandwich from Starbucks has sausage and eggs, this is sure to be a winner with my daughter.
So, here is what I did:
First, I cooked 1 lb of sausage and a teaspoon of fresh thyme in the bottom of dutch oven.
I drained the grease and then added 8 beaten eggs into the sausage and cooked until they were done.
While the eggs were cooking with the sausage, I placed thin slices of Rosemary Bread onto the griddle and placed thin slices of brie onto the rosemary bread and then placed another thin slice of bread on the top and grilled them on both sides until browned.
Next, I seperated the two slices of bread and melty cheese and topped them with the egg and sausage mixture and a few sliced grape tomatoes.
On went the top and then we enjoyed! They were crispy on the outside and flavorful on the inside. The grape tomatoes added some freshness. And, even our 15 month old enjoyed the sausage and eggs. It was a winner!
