Garlic, Thyme Mashed Potatoes

I made these potatoes for “our son is coming home for dinner” night along with roasted chicken and rolls. They were delicious and I hope you enjoy them as well.

Ingredients:

3 lbs Yukon Gold Potatoes (no peeling!)
8 sprigs Thyme
4 cloves Garlic
1 teaspoon salt for mashing (or to taste)
3 tablespoons salt for boiling
1 teaspoon black pepper (or to taste)

Instructions:

Cut your potatoes in quarters, keeping them similar in size for uniform cooking time and add them to your favorite heavy bottomed, deep pan. Mine, of course, is my white enamelware dutch oven. Boil your potatoes, thyme, and garlic in a pot until the potatoes are tender.

Drain potatoes in a colander. Return potatoes, garlic and thyme to the pot you cooked them in. Using your potato masher (bean masher) smash the potatoes and garlic until they are semi-smooth. This will also disperse the thyme into the mash. Add 1/4 cup half and half, 1/4 cup milk, and 2 tablespoons of butter and continue mashing until your potatoes are the desired consistency.

Place the lid on you pot to keep your potatoes warm until you are ready to serve. These potatoes have background notes of garlic and thyme and are great by themselves, or with gravy.
