Garden Fresh Cucumber Salad, quick refreshment to serve alongside all of your summer meals.
My littlest son and I took a trip to our local Farmer’s Market this week and I found such a great variety of fresh local produce! I really find it so inspiring to look at the hundreds of options to bring home and feed my family.
On this trip I found so many summer cucumbers…there are more varieties than I realized! So, I bought three…Lemon, Armenian, and Traditional. They were the perfect foundation for my Garden Fresh Cucumber Salad, which also includes some of the delicious “Sweet 100” cherry tomatoes from our garden. They are ripening at a rapid rate so there were plenty to brighten up this delicious salad.
Another change to traditional cucumber salads, I removed the refined sugars and included honey and an all natural Stevia Blend. The result, a refreshing, fresh, crunchy salad that is perfect alongside all of your summer meals.
I suggest letting it marinate for at least 1-2 hours, but, if it marinates longer…it is even more delicious because the flavors soak into the cucumbers even more.
