I really like egg roll wrappers. They work well for sweet and savory applications or even in salads when fried for crunch. Their versatility is a blessing and allows me to employ my creativity.
This Thursday I had some extra time since my husband offered to pick my daughter up where she volunteers. So, I decided to employ that creativity and make something yummy with these egg roll wrappers.
Here is what I did:
First, I Gathered 9 apples. I used 3 Gala, 3 Braeburn, and 3 Granny Smith.
Then, I peeled the apples.
…cored the apples.
And, cubed the apples and placed them into a large skillet with 4 tablespoons of butter.
I added in 1/2 cup of brown sugar, three tablespoons of flour, 1/2 cup of orange juice and 1/2 cup of granulated sugar.
I cooked them until the apples were softened and the sugars and butter melted.
I then added in 1/2 cup of Marscarpone Cheese and stirred. You could also use softened cream cheese here.
Place a small amount of filling in the middle of an egg roll wrapper. (You could also use Pie Dough here instead.)
I folded the sides in and then the top and bottom.
I then fried them in about 2 inches of 350 degree oil for 2 minutes or until browned on the first side. I turned them over and browned the second side for an additional minute or so. This would be a great place to use coconut oil…though I was out when I made these.
I placed them on paper towels to soak up any extra oil and then sprinkled with cinnamon sugar while the were still warm.
Eat while warm or room temperature. Would also be great served with ice cream or whipped cream or even a drizzle of frosting. 🙂
