My family’s all time favorite muffins are double chocolate chip muffins. So, today, while we were trying to take it slow at home I decided it was time to create a family favorite right here at home. I used cake flour to keep the muffins light, instant espresso to bump up the chocolate flavor, coconut oil for a healthy fat, and buttermilk for tenderness. All of this combined, made a delicious muffin that will surely be on the breakfast rotation.

Coconut oil… eggs… it’s practically health food. I think I’ll take 2. 😉

Is this correct with no sugar?
Jan, I thought I had fixed that! Thank you so much for bringing that to my attention! I should have included 3/4 cup of sugar. I will make that alteration in the recipe. Blessing to you!
