Cornucopia of Kale Recipes…

Do you remember a few weeks ago…when I was stumped by the kale? Well, as you may have guesses, the kale got used but I never really came up with a recipe focused on the kale…I just added it in appropriate places where it would add to the nutritional value without taking over the taste.

Today, I was watching an old episode of Iron Chef and guess what the “secret ingredient” was? Kale!! Those chefs had the challenge of making 5 dishes each in 60 minutes all with Kale as the star of the dish! It was quite amazing! This was the perfect battle for me to watch! They made everything from chowders to pasta and bread sticks…all with Kale as the star. And, to top it off, the challenging chef was one of my favorite contestants from chopped…his assistants were one of my other favorites and a chopped judge! So much fun to watch the challengers win this one! This inspired me to take a new look at kale.

Thankfully, since I am not an Iron Chef, and can hardly come up with one unique recipe for kale, a good friend passed along a link to me during my kale distress and I just now took a look at it. Well, thank you to my friend! She was so right! It contains some great recipes. I plan to employ some of them in the coming weeks as the bounty of Kale continues to arrive on my doorstep.
