On Monday afternoon I was looking for a fresh and light side dish to go with the Chicken Chili I was serving. We already had some tortilla chips and guacamole on the side, so this called for some fruit. With strawberries and blackberries in the fridge I was on my way to the side dish I was thinking of. I didn’t want to add any refined sugar, but I did want to get the juices going in those berries. So, here is what I did:
Take 1 lb of strawberries and 1 cup of blackberries and place them in a medium bowl. Add the juice and zest of 1 lemon and 1 orange. Add in a small amount of fresh oregano. Mix together and allow to marinate for 30 minutes and serve in small bowls that will be able to hold some of the juice with the fruit. This fruit salad is not only beautiful, it is refreshing too! Hope you enjoy!
Blessings!
