Thank you to the Pioneer Woman for her wonderful Cinnamon Roll recipe! I was up at the wee hour of 4:00 am so I decided to make these Cinnamon rolls for my husband to bring to his company’s staff meeting this morning. What a great way to say “Merry Christmas” to your co-workers. You can click the link above to follow the Pioneer Woman’s instructions, or follow along here. These cinnamon rolls are really easy to make. The bulk of the time is spent waiting for things to rise. Have no fear…you can do it! This was my first time and I will do it again for sure.
Ingredients:
Cinnamon Rolls
4 cups Whole Milk
1 cup Vegetable Oil
1 cup Sugar
2 packages Active Dry Yeast, 0.25 Ounce Packets
8 cups (Plus 1 Cup Extra, Separated) All-purpose Flour
1 teaspoon (heaping) Baking Powder
1 teaspoon (scant) Baking Soda
1 Tablespoon (heaping) Salt
6 sticks of Melted Butter
2 – 3 cups Sugar
Generous Sprinkling Of Cinnamon
Icing: (my own recipe) Combine all ingredients adding enough milk to make the icing pour-able. The Pioneer Woman also has a delicious looking recipe for maple icing included at the link above. I went a more traditional approach, but hers looks delicious!
8 ounces Cream Cheese
1 teaspoon vanilla
1 lb powdered sugar
about 1/4 – 1/2 cup whole milk to make the icing thick but pour-able
Heat your milk, vegetable oil and sugar to almost boiling and turn off the heat. Cool for 45 minutes to an hour. Then, add the yeast on top.
Stir in 8 cups of flour and leave to rise for 1 hour.
After the hour is up, add the baking powder, baking soda, salt, and last cup of flour and stir. Split the dough in half. Now it is time to roll out the first half of your dough. Continue with the second half once the rolls from the first half are in their pans.
And, top with 2 sticks of melted butter…oooooo shinny!
Now, add 1 – 1 1/4 cups of sugar to cover and sprinkle with cinnamon to cover.
Now it is time to roll. Roll the rectangle toward you going from one end to the other and then back again, keeping it as tight as possible.
Slice your roll into 1 inch pieces and place in a buttered pan. Each long roll makes about 25 cinnamon rolls.
Let rise for at least another 20 minutes. Then, place in a 375 degree oven for 17-20 minutes. You want to cook your rolls until they are light brown on top.
Remove them from the oven and add icing…a lot of icing. 🙂
