Chocolate, Chocolate Chip and Banana Mini Muffins This morning as my coffee was brewing my daughter thought she smelled chocolate muffins…she was mistaken, but it made me think that I could make some for her, even if I wasn’t already. So, I decided to create a recipe that would use the yogurt that was in my fridge. I also wanted to utilize the bananas that were rapidly ripening…well, not just because they were rapidly ripening, but because they help to reduce the added sugar as well. I then decided on the mini chips because they pack a chocolate punch with just a few…and because they are small, they distribute nicely. I added about 3 ounces into the batter and put the rest on the top just before baking. I also used whole wheat flour for half of the added flour to up the fiber content.

Even with all of these nutritional additions, my daughter and little son and I really enjoyed these muffins for breakfast, right out of the oven. They were moist and had a great texture and a wonderful chocolate flavor mixed with banana. And, because we made mini-muffins, there were a lot of them…we have plenty for future days…and I am thankful! 🙂

Here are the ingredients:

5 tablespoons Cocoa Powder
1 cup Whole Wheat Flour
1 cup All Purpose Flour
1/2 cup Sugar
2 teaspoons Baking Powder
1/2 teaspoon Salt
2 eggs
6 ounces of Mini Chocolate Chips
4 ounces of “Honey Yogurt”
1/2 cup Milk
2 large Mashed Bananas

Instructions:

Sift the dry ingredients together.

Add in the wet ingredients and mix together just until combined.

Line your mini-muffin pans with the cutest liners you can find…or any liners… 🙂

Mini Chocolate, Chocolate Chip and Banana Muffins

Fill each liner with 1 full teaspoon of batter (pushed off of the small spoon with another spoon) and top with a few mini chocolate chips.

Bake at 350 degrees for 14 minutes.
