Pasta is one of my families favorite meals. And, as you may have noticed, I tend to gravitate toward soups or veggie dishes. So, tonight, in a effort to make a quick and tasty meal that my family would all enjoy, it became pasta night. And, in an effort to use what we already had in the house, including something from the produce box, that meant cheesy pasta with spinach. But, not just any cheesy pasta…this pasta was cheesy from Swiss and parmesean, with just a little Cheddar for added cheesiness. It was tangy and creamy and enjoyed by all. If you want, you could also add chicken to this recipe and it would be great.
Ingredients:
3 tablespoons Butter
3 tablespoons Flour
2 cups Low fat Milk
Salt
Pepper
2 cups Swiss Cheese, Shredded
1/2 cup Heavy Cream
1/2 cup Parmesan Cheese
1 cup Cheddar, shredded
2 cups Spinach, Roughly Chopped
1 lb Bowtie Pasta
2 Pinches Fresh Ground Nutmeg
Instructions:
Add the butter in the bottom of a large pot. As it begins to melt, add in your flour. I added sprouted whole wheat flour, that is why it is so brown. 🙂
As the butter and the flour combine, slowly pour in your milk while whisking. Season with salt and pepper. Simmer and stir for 3-4 minutes or until the mixture begins to thicken.
Turn heat to low and add in the Swiss Cheese, the Cream, and the Parmesan. If you like your sauce even more creamy, add in 1 cup of Cheddar Cheese as well. Stir until combined and smooth.
Add in your freshly grated nutmeg (on a microplane grater)
Now, add in your pasta and your spinach and stir.
Next, scoop your pasta into a 9X13 pan and bake for 20-25 minutes, or until bubbly. You could also at this point top with more cheese and bread crumbs. That would be delicious, but my family doesn’t enjoy that so I left it off. 🙂
