I made the mash and it works! I am SO surprised! Here is how I tweaked the recipe:
1 large head of cauliflower, steamed and placed into the food processor. Be sure to drain off any water from the steaming process.
Add salt and pepper to taste, 1 tablespoon of butter, and 1/4 cup of Greek yogurt. Mix a minute or so until it is creamy. Place in bowl and dust with a bit of nutmeg. That is it! I will serve it to my family in a bit…and will let you know if they like it!
I’m going to try this sometime. I never thought of making mashed cauliflower before. I’m going to change out the seasonings and use garlic powder, pepper, paprika, dill weed, chives, and parsley which are the ones I use on my mashed potato casserole. I think it might work. I love the idea and this looks like a great recipe to experiment with. I may just mash them up with a potato masher, too. Thanks for sharing.

And the verdict was??? When I make it, my husband likes it. But I made it once for Thanksgiving Dinner and didn’t tell the guests – they could tell it was “different” but still thought it was mashed potatoes. They were a bit put out that I tried to fool them with it. Maybe with Theresa’s seasonings it would be a closer fit…
