Breakfast on the go…does anyone else resonate with that? Meal Prep? Anyone else need meal prep to make sure you feed yourself well? I’m pretty sure I’m not alone there. π
One more breakfast to share here in Breakfast week. This one would be a good one to have ready for Thanksgiving morning. It’s hearty, quick, and a crowd pleaser. Serve with some fruit and you have a complete meal, all made in one muffin pan.
Here’s what I did:
Breakfast on the Go – Sausage and Veggie Egg Muffins
- Prep Time: 10 minutes
- Cook Time: 15 minutes
- Total Time: 25 minutes
- Yield: 12 muffins 1x

Ingredients
10 Eggs, beaten
6 Breakfast Sausage Links (uncooked), sliced
1 cup Peppers, chopped
Β½ cup Onion, diced
Β½ cup Mushrooms
Β½ cup Cauliflower Rice
Salt
Pepper
Fresh Cilantro for garnish
Instructions
- Spray each individual muffin cup with cooking spray.
- Separate chopped sausage into each individual muffin cup and place in oven as it preheats to 425 degrees.
- SautΓ© veggies and season them with salt and pepper.
- Whisk eggs and season with salt and pepper.
- When oven is preheated, the sausage should be cooked through. Add veggies in each cup and stir.
- Top with whisked eggs.
- Bake for 15 minutes.
- Remove from cups and serve or store in the fridge for breakfast for the rest of the week.
