That is what this casserole is great for! Today I participate in a ladies meeting called Mom’s Inc. at my church. It is for moms who have children who are preschool aged. Each discussion table takes an opportunity to bring breakfast for the other ladies and tomorrow is our table’s turn. So, the Tasty Kitchen blog came to my rescue! Thank you Tasty Kitchen! I have enjoyed posting a few recipes here, but I have not yet used one, until today!
Because of this great website, I will be sharing Fiesta Breakfast Casserole with the other ladies at Mom’s Inc. It looks and smells delicious and I am sure it will be a hit. This is one of those recipes that you make rarely, because it is so rich. But, when you make it, it is a wonderful treat! I especially like it because I could make it the night before and just bake it in the morning.

Just tell them how many you are serving and it will adjust the ingredients! It is a very helpful tool!
I did change a couple of items. First, I used half hot sausage and half regular. Also, I added sage, because it is SO good with sausage. And, I used a mild white cheddar for the cheese. The rest of the ingredients and directions were followed strictly. Oh, except this one…I left out the cayenne pepper. I hope you get an opportunity to try this recipe. It is a keeper!
