I have nothing against complex recipes, but so often simple is best. And, this “recipe” is the definition of simple side dish.
I take the time to rub the potato with melted ghee and sprinkling it with salt before cooking it and it makes all the difference. And, take the time to bake these in the oven…the skin gets crispy and the insides are so much creamier!
Then, while the potatoes are baking, the garlic is making friends with the ghee.
Here is what I did:
Baked Potatoes with Garlic Ghee
- Prep Time: 10 minutes
- Cook Time: 60 minutes
- Total Time: 1 hour 10 minutes
- Yield: 4 servings 1x

2 Russet Potatoes
1 tablespoon Ghee + 2 tablespoons Ghee
1 teaspoon Salt
1 clove Garlic, smashed and minced
Instructions
Poke 10 – 12 holes in each potato to let steam escape while baking.
Rub Potatoes with the tablespoon of ghee and sprinkle with salt.
Bake Potatoes for 1 hour at 350 degrees or until soft.
While the potatoes are baking, Place two tablespoons of ghee and the garlic in a small saucepan.
Heat until ghee is melted and then leave to sit with the smashed and minced garlic.
Split Potato down the middle and scrape the potato with a fork and fluff it up.
Pour half of the ghee over each potato and serve.
This garlic ghee is so amazing you will think you are eating something super special with this simple side dish.
