I attend a great group called Mom’s Inc. at our church. And, in that group I sit at the Pink Table…and we have a great group of girls. Who else would begin texting on Saturday and then on Sunday decide to throw a shower for two of our ladies the next day? Who else would plan the whole party via text and end up with a great gathering? There were gift cards, decorations, muffins, strawberries, scones, adorable cupcakes and these mini quiche! And, there were children running around laughing and enjoying one another. What a fun day! The guests were honored and we had a great morning!
Here is my contribution…Mini Bacon, Swiss, Tomato and Mushroom Quiche! I had been eager to try out my mini muffin pan that I just purchased and it worked great! One nice thing about making these so small is that it really felt like a treat…something about them being wrapped in a cute cupcake liner made them special.
Here is what I did:
First, time to gather ingredients:
Then, time to chop a few items…
Cooked Bacon – 8 slices
Swiss Cheese – 4 slices
Shallots – 1 medium
Mushrooms – 4
Tomatoes – 4 mini
Scallions – 2 thinly sliced
And whisk…
8 eggs
1/2 cup half and half
salt and pepper
And combine…
1 cup Panko Bread Crumbs
1/4 cup melted buter
And line…
the muffin tin with cute liners
And assemble…
Place a small amount of bread crumbs in the bottom of the muffin cup and press down. Top with the egg mixture and then add in a bit of all of your toppings.
And bake...
Bake at 350 degrees for 12-15 minutes or until the quiche is set.
And serve…
These little treats were a success! Next time I will bake them in a full-sized muffin cup for ease of eating…but they were VERY cute this small. 🙂 I will be making these again and bringing them to our next Mom’s Inc. meeting.
