In our backyard, you will find what my husband and I refer to as our orchard. Our children just smile a little knowing that “orchard” is a bit of an exaggeration…we have four trees, two of which aren’t doing very well due to the squirrels feasting on their bark. But, the other two trees…they are GREAT! We have a bounty of oranges on our 1 1/2 year old tree and we just had a plentiful harvest of three avocados on our 1 1/2 year old avocado tree. 🙂 Here they are:

If you know my husband, and you have eaten meals with him, you will likely know that he really enjoys avocados. Therefore, these three avocados are quite a treasure. We have watched them grow for the last year anticipating them being ready to be picked. A couple of weeks ago, the time came. And, yesterday, they ripened! Here they are…carefully arranged by my husband.
By far, my husband’s favorite thing to make with avocados are avocado sandwiches. His second favorite is Guacamole. While I enjoy both of these items, my favorite is the Avocado Egg Rolls at the Cheesecake Factory…that sauce they serve with them is YUMMY! But, I digress…

Here is our first Avocado ever, being made into an avocado sandwich…

He let me have the first bite…that was quite a gift knowing how much he was looking forward to this sandwich. 🙂 I must admit, because avocados are usually pretty yummy, I didn’t expect this one to be much different. I was SO wrong! This avocado was more flavorful than I realized that it would be. So, this year there are three…while we are grateful for these…we are hoping for more next year. 🙂
Avocado number two is about to be made into the 2nd ever avocado sandwich from our very own trees. Robin, if you are reading this, I am heading to your office with the sandwich soon. 🙂
