Mini Apple Crumble – The Flavors of Fall in a Jar!

Our friends, the Smith’s, came over for a quick dinner last night so I decided to make a new dessert…one that was portable since we had to run out the door to a home school meeting shortly after dinner. So…the Mini Apple Crumble was born.

First, peel 15 Granny Smith Apples (I try to get the peel off each apple in one piece…makes it into a game!)

Next, slice the apples in uniform (nearly…) slices for even cooking

Now, add 3 Tablespoons of flour, 3/4 cup white sugar, 1/3 cup brown sugar, 2 teaspoons cinnamon, 1/4 teaspoon salt, and 2 Tablespoons Lemon Juice (I was all out of lemons…so I used lime and it still turned out great!) and stir to combine.

Now, it is time to work on the crumble

In a separate bowl, combine 1 cup quick cook oatmeal, 1 cup flour (whole wheat works here), 1/2 cup brown sugar, 3/4 cup white sugar, 2 teaspoons cinnamon and 8 tablespoons of cold butter. Use a pastry blender or the pulse feature on your food processor to combine until the mixture resembles fine crumbs.

Finally, it is time to fill the jars with this delicious mixture.

First, evenly distribute the apples in the bottom of 9 or so pint sized mason jars (2 cup capacity). Then, evenly distribute the crumble onto each jar on top of the apples. It doesn’t have to be perfect…as you can see from the photo. 🙂

Bake for 45 minutes at 375. Once they come out of the oven they can be eaten right away, or cooled on the counter and then covered with their lids until you need them.

We served ours with a scoop of vanilla ice cream, right on top in the jar. They would also be delicious with fresh cinnamon whip cream. Enjoy!

Sadly…we ate them too fast to take a photo of the final product topped with ice cream. Maybe next time.

But, I will end with some good news! Admittedly, I was concerned that we would not be able to get the jars cleaned after eating all that yummy crumble, but, I am pleasantly surprised!
