Tomato, Garlic, Onion and Cilantro Steak Marinade

I am going to post this recipe without any photos because it was SO good! Sadly, the photos just didn’t represent so I am leaving them out. But, this shouldn’t happen much more since I have gotten a used DSLR camera to begin taking photos with! I am SO grateful!! I should have it soon so things will be looking up! 🙂

So, I purchased a package of steak from Whole Foods with the hope of my husband grilling it…but, I forgot that his grill needs some work done to it so…the steak went in the freezer for a later date. The time came to bring it out and the grill was still not fixed…so I decided to tackle it on my own. 🙂

Here is what I did:

Pulse the following ingredients in your food processor:

1 cup grape tomatoes
5 cloves garlic, minced
1 small onion
1 cup cilantro leaves
Juice of 1 lemon

While the food processor is running, drizzle in:

1/2 cup good olive oil

Finish with:

Salt
Pepper
Red pepper flakes

Pour the marinade over about two pounds of steak and let marinate for 30 -60 minutes.

At this point you could either grill your steak, or sear it in a hot pan on both sides and then finish is in the stove until medium (or whatever temperature you like your steak).

I sliced the steak and served it with warm corn tortillas, garlic broccoli and cilantro lemon rice. Yum!
