Broccoli Cheese Soup – Part 2

As suspected, we arrived home around 7:20. I was thrilled to have both my husband and the broccoli cheese soup waiting for us. I was actually much more thrilled that my husband was here waiting because I really missed him today…but still, I was very grateful that dinner was almost done!

Because the soup was already really good without cheese and half-n-half, I added very little to finish it off. To a large pot of warmed soup I added about 1 cup of sharp white cheddar cheese and about 1/3 cup of half-n-half.

That was the perfect amount to add some richness, but still allow the flavor of the rest of the ingredients to shine through.

I floated some whole wheat crackers on top of my soup and my daughter added some red pepper flakes to spice hers up and a salad on the side. My husband added a tomato and avocado sandwich :). We all also enjoyed some of the prepared strawberries and sliced apples.

I am once again thankful for Produce Prep Tuesday! Even after a long day away from home we were able to enjoy dinner together around the table. What a blessing!
